Turkey Spaghetti Squash Lasagna











INGREDIENTS:

  • Spaghetti Squash 
  • Ground turkey
  • Shredded Mozzarella cheese (I used only 1 bag)
  • Marinara sauce
  • 1 pkg frozen spinach
  • 1 pkg basil
  • 1 tub of ricotta cheese
  • 9X13 inch baking dish




Preheat oven to 400 F

Cut the squash in half and scoop out all the seeds with a spoon. Drizzle a little olive oil in the inside of the squash.

Bake for 40 mins.



Now time to prepare the fillings!





Cook the ground turkey until brown. You don't need to put any oil in the pan.





Pour the marinara sauce into the pan






Add basil leaves to the mixture and stir until leaves are cooked.





Mix ricotta cheese and spinach together




The squash should look something like this. Just get a fork and scrape the inside! 

Reduced oven to 325F





Here comes the layering part!

Meat sauce, squash, ricotta mixture, mozzarella and repeat! Mozzarella should end up at the top. Remember, each layer doesn't have to be perfect! 


Cover pan with foil. Bake for 20 minutes. Uncover and bake for another 15 min.
